Fresh-roasted coffee tastes best when it's stored well. Four things wear it down: air, light, heat and moisture. A few simple habits protect the flavor from the first cup to the last.
Keep the air out
Air is coffee's biggest enemy. Once a bag is opened, oxygen slowly dulls the flavor. Cats & Cosby Coffee comes in a resealable stand-up pouch, so for most people the bag itself is all you need. After each use, press out as much air as you can and seal it firmly. If you prefer, or if you buy a larger bag, an airtight container works just as well.
Keep it cool, dark and dry
Store coffee in a cupboard or pantry, away from sunlight, the stove, the oven and the coffee maker. Heat and light break down the oils that give coffee its aroma. Keeping the coffee in its pouch or in an opaque container works better than a clear glass jar on the counter.
Skip the refrigerator and freezer
The fridge and freezer are damp and full of strong odors, and coffee absorbs both. Taking a cold container in and out also causes condensation, which is bad for the beans. A cool cupboard is the best place for your coffee.
Whole bean or ground?
Whole beans stay fresh longer because less surface is exposed to air. If you have a grinder, grinding just before brewing gives the best flavor. Ground coffee is more convenient, so it's especially important to seal it well and use it sooner. Cats & Cosby Coffee comes both ways, so choose whichever suits your routine.
Buy what you'll use
Coffee is at its best in the weeks after roasting. We roast to order in small batches, so your bag arrives fresh. Buy the size you'll finish in a reasonable time, then reorder. A WABC Coffee Club subscription delivers a fresh bag on a schedule and saves you 15% on every order.
